make ahead pancake mix from scratch is a money saving, time saving delicious way to start the day

Homemade pancakes are part of the routine around my house. I don't buy the prepackaged, premade mixes or frozen kind because from scratch is easy, quick, and, they cost less, too. Just like with all things homemade, the taste is vastly superior in every way and I'm not just saying that because I'm full of myself either. :o)

You'll need the following ingredients for 8 cups of pancake (& waffle!)mix:

7 cups flour
1 cup sugar
2 tablespoons plus 2 teaspoons baking powder
1 tablespoon plus 1 teaspoon baking soda
2 teaspoons salt

Mix everything together really well and store in an airtight container for up to 3 months.

To make pancakes, take one cup of mix and add 1 egg, 1 tablespoon melted butter, 1 cup milk, and 1/2 teaspoon vanilla. Mix well and let sit for a couple of minutes while you heat up your griddle to medium-low. 

To fix a good old yummy pancake, brush the griddle with vegetable oil, pour about 1/3 cup pancake batter into circles about 2 inches apart. Let cook until bubbles form all over the top and then, flip and do the same for the other side- about 2 minutes each side. 

This makes 6 big pancakes. (As is, this is the perfect amount to feed my 3 Littles breakfast. I have to make two times this amount to feed my family of five pancakes for supper.)

To make waffles, mix the same ingredients as above. Makes four waffles.
