I had the great pleasure of eating some down home country cooking this past week. One of the dishes was this tasty casserole. I've made one for years, but not one using bacon. I know! Bacon is YUMMY goodness in anything. Coming off of summer squash and heading into fall squash, I figured y'all could use another way to prepare this plentiful veggie. Peace, B.

You'll need the following ingredients to make one 9X13 inch casserole:
5 medium crook necked (yellow) squash or
4 cups frozen, blanched squash
6 strips of bacon, cooked crispy
1 minced onion (I'd use Vidalia, but I'm partial.)
1 tablespoon butter
1/2 cup milk
2 eggs, beaten
2 cups shredded extra sharp cheddar cheese
salt and pepper to taste
1/2 cup French's French fried onions

Preheat oven to 350 degrees. Coat a 9X13 inch casserole with cooking spray.
If you're using fresh squash, rinse and cut into half moon slices. Saute the squash and the onion in the butter until tender. don't overcook it. Remember, you're gonna bake it too.
If you're using squash you put up and has been blanched already, just saute the onion and add to the thawed squash.
In a large bowl, add the eggs and milk. Stir to combine. Add 1 cup of the shredded cheese. Stir well. Crumble the bacon and add it to the bowl. Stir to mix. Add the squash and onion. Add salt and pepper to taste. Mix well and pour into casserole dish.
Spread mixture out evenly in the dish. Sprinkle the remaining cup of cheese on top of mixture. Sprinkle with the French fried onions.
Bake for 30 to 45 minutes or until cheese is golden brown. Serve hot.
