3 cups all purpose flour
2 teaspoons pumpkin pie spice
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups peeled and chopped apples (I used Granny Smith.)
1 cup sugar
3/4 cup honey
3/4 cup vegetable oil
1/2 cup cooled coffee
about 1/2 cup toffee glazed almond slivers (I used Almond Accents.)
Combine flour, pumpkin pie spice, baking powder, baking soda, and salt and set aside.
Mix together on medium speed the eggs and then, add the sugar, honey, oil, and coffee. Beat until smooth.
Add the flour mixture and beat until just combined. Fold in the apples.
Pour batter into muffin pans and sprinkle about 1/2 teaspoon almond slivers on top of each cake. Bake for 25 minutes.
