This made it on our May menu because we have frozen sausage I'd like to use this month for supper and I didn't want to do biscuits and gravy again. I was hesitant to go with this right now because apples are so expensive, but we really do like this meal. I like to serve it in the fall when I can stuff some squash with the sausage and apples. (I like doing it this way because it makes for some fancy-schmancy presentation with each person getting his or her own squash filled with yumminess.) It's a dish that goes well with polenta and grits too and that's how we'll be eating it until it's time to harvest squash from the garden. This is really filling and a super quick meal to whip up on a busy week night. Peace, B.
You'll need the following ingredients to make sausages and apples for five to six people:
1 pound pork sausage
4 or 5 apples cut into bite size chunks
1 teaspoon thyme
2 teaspoons fresh minced sage (or 1 teaspoon dried)
1/2 teaspoon crushed caraway seeds
salt and pepper to taste

Brown the sausage, breaking it up as you cook over medium high heat. Add the apples and continue cooking for about 5 minutes. Stir occasionally. Stir in the spices and let everything heat through. Serve with grits or polenta. We really like this with jalepeno-cheese grits.
