Chap Ch’ae is a Korean dish of mixed veggies and cellophane noodles. I use ground beef to keep this meal super frugal, but you could use other meats like ground sausage, chicken or beef. I like using leftover brisket in this dish or marked down rotisserie chicken.
Cellophane noodles are kinda transparent and made from sweet potatoes. You should be able to find them in the ethnic aisle or in an Asian market. If you can’t find (or don’t have) cellophane noodles, you can use vermicelli cooked al dente. Most folks make this dish with mushrooms, but my family doesn’t particularly care for mushrooms. Add them if you like. (About 5 or so.) Just keep all the veggies uniformly cut.
This is by no means authentic, but I picked up the idea of Chap Ch’ae after sharing a meal with some friends in Louisiana. This is the kind of meal I talk about in my coupon class. My family has an eclectic palette because I serve meals inspired by many different cultures. We save money because of this! If your family enjoys stir fry, this won’t be a stretch for them at all. I use the following ingredients to make enough Chap Ch’ae to serve my family of five:
16 ounces cellophane noodles or vermicelli
1 pound lean ground beef
4 minced garlic cloves
2 carrots, cut into matchsticks
1 bunch of green onions, cut into 1 inch sticks
2 cups chopped spinach
½ cup soy sauce
4 tablespoons sesame oil
2 tablespoon sugar
1 tablespoon sesame seeds
Cook noodles according to package directions. Set aside.
Meanwhile, cook beef and garlic in a wok over medium heat. Add carrots and green onions. Cook for 3 to 4 minutes, stirring to avoid scorching. Add spinach. Cook another 2 to 3 minutes, stirring to avoid scorching.
In a small bowl, combine soy sauce, sesame oil, sugar and sesame seeds. Add to wok and toss. Add noodles and toss to coat.
Easy peasy, right?!

I know I’m not the only parent who’ll be happy to see the tail end of the school bus come August. An empty nest I can handle. An empty wallet is another story. Here are a few helpful hints to help keep your family in the black when it comes to Back to School shopping.
CLOTHING
First, take inventory of what you have and really ask yourself if your child needs a whole new wardrobe. Odds are he or she doesn't and you're simply buying into the hype that drains so many bank accounts this time of year.
If you need to add to what's there, then hit the clearance sales and thrift stores.
If you aren’t already a member of a “hand-me-down chain,” then call a few friends and relatives to start one. You’ll save a ton of money by swapping clothes and shoes.
If you must purchase new clothing, make sure you buy items that can be worn with a number of different pieces.
Don’t fall into the brand name label trap. Most stores offer their own brand of clothing that is comparable in both quality and durability.
Remember, you don’t have to have a completely new wardrobe to start school, no matter what your kids might think.
