I know it's not nice to brag, but seriously, friends... these might be the best darn cupcakes I've ever made! I was looking for some faboo dessert to make for my family tonight. Just celebrating no afterschool commitments that would cut our family time at dinner short. I have steaks marinating for the grill, spinach ready for the pan, and potatoes ready for mashing. I haven't made peanut butter cupcakes in a while, so I was thinking I'd do those. BUT THEN, I got to thinking about how a little Snickers bar would be faboo inside a cuppy cake with that cream cheese filling and BOOM! Another faboo recipe is born! The Snicker bars melt to the bottom of the cupcake and the cream cheese filling is nestled in the middle. It is just the perfect combination of flavors. We sampled one warm from the oven and my middle-Little said, "Mama, you have to blog about this one now." Consider that done and done! Enjoy! Peace, B.
This recipe makes two dozen cream cheese,
Snicker filled chocolate cupcakes!
Preheat oven to 350 degrees.
Line two muffin pans with 24 cupcake papers.
Prepare a box cake mix as directed on the package. I used triple chocolate fudge. Set aside.
In another bowl, mix together 8 ounces cream cheese, one egg, and two tablespoons sugar. Mix until well blended.
Spoon about 1 tablespoon of cake batter into each cupcake liner.
Place a dollop of cream cheese mixture on top.
Place one Snickers mini candy bar on top of the
cream cheese mixture and press down.
Top with another tablespoon of cake batter.
Bake for about 18 minutes. Remove from oven and cool completely.
I am serving these warm with a scoop of vanilla ice cream on the side, but I'm sure you could frost them with chocolate or caramel and they would be fabulous too!
