I know a family from back home in Satsuma, Alabama who are simply magical. Four strong, fierce sisters who had the coolest mama and daddy ever. This is their daddy's jambalaya recipe as shared by his youngest daughter (my oldest girlfriend, Kristi). I've changed it a little over the years to suit my family's tastes, but this is essentially it. This recipe easily doubles and tastes best with a heaping pan of sweet cornbread and a large pitcher of sweet tea to cut the heat. My family has this every single month and it never fails to please. The secret is using Conecuh brand sausage. If you don't have Conecuh in your local grocery, bless your heart. Here's their website. You can order it directly from them. In a large pot,
saute the following in a couple of teaspoons of butter:
one minced yellow onion
one minced green bell pepper
four cloves minced garlic
two minced and seeded jalapenos
(Or one if you don't like spicy!)
one pound Conecuh smoked sausage
(or whatever brand you like), cut into bite size pieces
Add the following ingredients to the pot:
one can petite diced tomatoes
one teaspoon Cajun seasoning
(I use Tony C's. That's Tony Chachere's .)
1/2 teaspoon black pepper
two teaspoons Worchestershire sauce
two cups beef broth
one cup white rice (I use Zatarain's.)
Bring to a boil, stirring frequently. Reduce heat; cover.
Simmer for 20 minutes.
