The first time I had chicken cacciatore was as a middle schooler at my friends' house. Sonja and Margo's mama, Judy, is an excellent cook and I had never had anything so wonderful. Caccaitore is Italian for hunter and means a dish made with wine, peppers, onions, and mushrooms. The meat is often braised chicken or rabbit. I don't put any mushrooms in mine, but you could easily throw those in as well as some zucchini or whatever else suits you. This is a real family favorite here, a nice hardy meal for any time of year. Peace, B.
Saute 4 cloves minced garlic, one chopped bell pepper, and one minced onion in a little olive oil. Set aside.
In a 6 quart crock pot, add the following ingredients:
two 28 ounce cans of crushed tomatoes
one cup white wine
two teaspoons oregano
one teaspoon basil
1/2 teaspoon salt
1/2 teaspoon red pepper flakes
your cooked veggies
Mix well. Place 2 to 3 pounds of chicken in the sauce. I like to use bone-in breasts and thighs for this recipe, but you can use whatever you like. Set on low heat and let cook in the crock pot for 6 to 8 hours.
Serve over pasta with Parmesan cheese, a crusty bread, and a nice big salad. This is even better the second day!
