You know how some folks put salt on everything? I'm like that with pico de gallo. Okay, I don't put it on everything, but close enough! The Littles and the Teenager like it lots too, so I generally have a bowl of it in the fridge. We like to add it to whatever we're eating, but mostly, we like to dip tortilla in sour cream and then, in the pico. And then, drink a margarita, but that's me mostly. ;o) We eat it all year round, even the winter, but I guess for most folks it's a summer time thing. Enjoy!

Seed and dice 4 or 5 plum tomatoes. Finely dice one medium white onion. Seed and finely mince two or three jalapenos. Mix all three in a bowl. Add diced cilantro (I pick enough leaves to cover the palm of my hand.), the juice of one small lime, and a dash or two of sea salt. Stir and let sit, covered, for about an hour on the counter. The flavors will get to know one another better at room temperature, friends.
Easy peasy, huh?
