A friend of mine made a trip up to the mountains yesterday for some apple pickin' and this got me to thinkin' about applesauce and that got me to hankerin' for some. The Hallmans are big fans of apples. It's one of our go-to fruits. We eat apple slices with just about anything and we serve them in lots of foods too. (We had to banish them altogether when Gracie developed an allergy to them. She's since outgrown it and we're back on with one of our favorite fruits.) The kids are funny about applesauce though. They don't like plain old applesauce. Strawberry applesauce is the only kind they'll eat and since I won't buy the store kind because it's 1.) too expensive and 2.) bad for you, I had to come up with my own recipe for the stuff. This is an easy recipe that makes a chunky, sweet sauce that stores well. Peace, B.
ps
I had a friend tell me once that this was more of a compote than a sauce, but I think he's insane and my children would roll their eyes at me if I used the word compote.
Peel, core, and slice 6 apples (I guesstimate about 3 pounds). I use an apple slicer to do the coring and slicing part. Pile them in your crock pot. Remove the stems and slice 10 to 15 large strawberries. Add 1 and 1/2 teaspoons cinnamon and 2 tablespoons sugar and stir the fruit. Cook on low for 3 hours. Give it a stir or two halfway through cooking and then, again at the end. Make sure the apples are fork tender. If not, cook a little more. If you need to add more sugar, now is the time to do it. Serve as a side or as dessert. We've also added blueberries and raspberries to this and had it on top of waffles. Yummy, yummy!
