Yes, I know, friends. It's wrong to be so full of yourself and your own cooking, but Oh. My. God. You need to try this! Inspired by my friend, Shannon Felt, who is just one faboo cook, and armed with all of the FREE (or close enough to it) stuff I had from Ingles triple coupon week, I thought I'd give pimento cheese spread a go. I've made it before, but it's not something the rest of the family likes, so I don't make it often enough to have a spectacular method of my own. I served this up on rolled tortillas as "Pimento Pennywheels" alongside some other delicious dishes at the LOST themed party I hosted this weekend.
Yummy, yummy, yumminess!
In a large mixing bowl add the following ingredients:
4 ounces softened cream cheese
1/3 cup mayonaisse
1 teaspoon garlic powder
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
8 ounces shredded extra sharp cheddar cheese
4 ounces crumbled feta (I used the tomato and basil kind.)
2 ounce jar of diced pimentos
Use a hand mixer to combine all ingredients really well. It'll have a very thick consistency, friends. I let it sit in the fridge for a couple of hours so all those flavors could get to know one another better. I confess, Errol and I enjoyed a couple of pimento cheese sandwiches on onion rolls for lunch before the party, but there was plenty left for 36 precious "pennywheels!" By the time I went through the buffet line, those babies were gone. I think that means they were a hit. Hope y'all like it!
