Sunday is usually my baking day, but ever since I purchased this 50 pound bag of bread flour on my own, I can't stop baking during the school day too! We've been incorporating the experience into our lessons, so it's all good. ;o) This is a very filling, very moist, very good bread. Great for breakfast or dessert. This recipe makes a large loaf of bread in your bread machine. I cut the loaves in half and freeze them or give them to friends. Peace, B.
Spray your bread machine pan with cooking spray, even if it has a non stick coating. Add the following ingredients, in order to your bread machine:
2/3 cup milk
1 teaspoon vanilla extract
2 eggs
1/2 cup softened butter
3 mashed overripe bananas*
2 and 1/2 cups bread flour
1 cup sugar
2 and 1/2 teaspoons baking powder
1 teaspoon salt
1/2 cup chopped walnuts
Set on either quick bread; cake; or batter bread setting. I check and scrape down the sides gently about five minutes after I start the machine. Just catch it before the bread starts to bake. My machine takes two hours from start to finish.
* I freeze overripe bananas that have been marked down at the grocery store. They turn black and are perfect for making banana nut bread later. All you do is defrost the bananas in the microwave for about 30 seconds and squeeze them out of the peel and into the pan. Easy peasy!
